A rack is a unit of everything

The dish pit is easiest to reason about in racks rather than plates. A rack is what the machine processes, what the landing table holds, what the operator carries and what the clean shelf stores. Convert covers into racks once, and every other question in the station becomes arithmetic on the same unit.

The conversion is where the errors hide. Six washable items a cover sounds low until you count: a plate, a side plate, a glass, three pieces of flatware. Then add the water glass that got replaced, the ramekin, the coffee cup. And items per rack is not the number on the rack manufacturer sheet, which assumes a rack of identical glasses. A real rack coming out of a real service, holding plates and glasses and a handful of flatware, holds fewer.

Sixty-five percent is the honest number

A ninety second cycle implies forty racks an hour, and no dish station in the world achieves forty. Between cycles someone has to scrape, rack, close the door, wait, open it, pull the rack, stack it and start again, and that person is also emptying bins and answering the line. Running the machine two thirds of the hour is a normal, competent result for one operator.

This matters because the failure gets diagnosed wrong. When the pit falls behind, the conversation is usually about buying a faster machine. A second pair of hands taking the run share to 85 percent gets you to 34. Racking 25 items instead of 20 pulls demand down from 42 to 35. The backlog is inventory, not just delay

Here is the thing that connects the dish pit to the front of house. Racks waiting on the soiled side are plates that have left circulation. If the peak leaves six racks stacked up and a rack holds twenty items, a hundred and twenty pieces are out of service at exactly the moment the line needs them. Add what is on the tables and you have the par level the peak actually demands.

So a slow dish station is paid for twice. Once in the labour hours to catch up, and once in the extra plates, glasses and flatware you have to own so that the catching up does not become visible in the dining room. Restaurants that run short of plates at eight in the evening are usually not short of plates. They are short of dish throughput at seven.

What is deliberately not here

Nothing on this page speaks to whether a machine sanitises. That depends on final rinse temperature or on chemical concentration, on the machine listing, and on what your health department requires and verifies. How many racks per hour does a restaurant dish machine need to do?

Work it from covers rather than from a machine spec. Peak hour covers times washable items per cover, divided by items per rack, plus the pots and prep that never appear in a cover count. A hundred and twenty covers at six items and twenty per rack is thirty-six racks, plus six for pots is forty-two. Then compare that to what your machine achieves at a realistic run share, which is well under its back-to-back rating.

Why do we run out of plates during service?

Usually because the dish pit fell behind an hour earlier and the plates are sitting dirty on the landing table. Count the backlog in racks, multiply by items per rack, and add what is currently in front of guests — that is how many pieces are unavailable at the worst moment. If that total is above your par, the shortage is guaranteed rather than unlucky, and buying more plates and fixing the pit are two ways to solve the same equation.

Is a faster dish machine worth buying?

Compare it against the alternatives before you sign, because on most numbers no single change fixes a real backlog. Cutting the cycle from ninety seconds to sixty raises throughput by half at a constant run share. Run all three on your own figures before assuming the machine is the constraint, and expect to need two of them.

How much space does the dish station need?

Size the soiled side from the backlog, not from the average. If the peak leaves six racks stacked up, six racks at roughly twenty inches square have to go somewhere, and the clean side needs comparable room because a clean rack with nowhere to land stops the machine just as effectively as a dirty one with nowhere to wait. Undersized landing tables are the most common physical cause of a low run share.

Does running the machine faster affect sanitising?

That is a separate question with a separate answer, and this page does not address it. Sanitising depends on the final rinse conditions or the chemical concentration your machine is designed around, on its listing, and on what your health department requires you to verify and record.
