Taps, not trees, is the unit

Everything downstream of the woods scales with taps: sap volume, tubing, tank size, boiling hours, jugs. Tree count only matters as the thing that produces the taps, which is why this page asks for both and then quietly stops using trees. A hundred large trees carrying three taps each is the same operation as three hundred small ones carrying one, right up until you have to walk the lines.

How many taps a tree of a given size can carry is not a number this page will state. It depends on the species, the health and crown of the individual tree, whether it is a yard tree or a forest tree, and on the guidance your state maple producers association and extension service publish — which has moved over the decades and is more conservative now than it once was. Those are the people to ask, and their figures go in the fields.

Sap per tap is the number nobody can give you

It swings with the weather, the year, the trees and the collection method. Buckets on gravity, tubing on gravity and tubing under vacuum are three different operations on the same woods, and the spread between them is not small. A season with a long stretch of freeze-thaw runs far ahead of one that warms up and stays warm.

So the honest approach is to work from your own record. Write down what came in, per tap, every year. Two seasons of your own data beats any published average, because it already contains your trees, your slope, your aspect and your habits. Until you have that, use a regional figure from the extension service and treat the answer as a range rather than a plan.

Sizing the tank for the day that ruins you

Season totals do not size storage. A single day does. The classic bad afternoon follows a hard freeze overnight and climbs into the forties by lunchtime, and a bush that averages a hundred and fifty gallons a day will hand you four hundred in one go.

If the tank cannot hold the peak, the surplus has to go through the evaporator on the day it arrives, and that is how a hobby operation ends up boiling until three in the morning in the one week of the year the sap is best. The choice is more storage or more evaporation, and storage is usually the cheaper of the two.

Questions people ask

How many taps can one tree take?

This page will not tell you, and you should be suspicious of any page that answers it in one line. It depends on the diameter, the species, the crown, the health of that specific tree and the guidance your state association or extension service publishes, which has become steadily more conservative as the long-term effect of heavy tapping has been studied. Get the schedule from them, put it in the fields, and err low on trees that look stressed. The tree is a thirty year asset and the season is six weeks.

What sap-per-tap figure should I use if I have never done this?

Ask the extension service or your state producers association for a regional figure, then discount it for a first season, because a new operation loses sap to leaks, late tapping and lines that are not right yet. Record what actually arrives and use that number next year. The calculator is doing simple multiplication either way — the whole quality of the answer sits in that one input, which is why it is a field with a hint rather than a constant.

Does vacuum really change the numbers that much?

It changes them enough that a figure from a bucket operation is close to useless for planning a vacuum one, and the reverse. Rather than repeat a claimed multiplier here, treat the collection method as part of what your sap-per-tap number describes: a figure you took off your own buckets applies to buckets. If you switch methods, expect the number to move and plan the first season on the conservative side of whatever your supplier or association tells you.

Why does the calculator ask for running days rather than season length?

Because sap does not run every day of the season, and dividing by calendar days would understate the daily flow badly. A season that spans six weeks might have eighteen days that actually produce, with the rest either frozen solid or too warm. Dividing by the running days gives an average day that resembles a real one, and the surge factor on top of it is what sizes the tank.

Is a bigger bush always better?

It is more taps, more tubing, more walking and more boiling, all of which scale linearly, and more risk of a leak you do not find. The constraint that usually bites first is not tree count but evaporation and storage: a bush that puts more sap in front of you than you can boil in a day is a bush that wastes sap in the best week of the season. Size the taps against the pan and the tank, not against the number of maples you happen to own.
