The oven sets the rate and nothing else does
Everything upstream of the oven can be worked in parallel. Mixing, dividing, shaping and proofing all overlap, and adding a pair of hands speeds them up. The oven cannot be parallelised at all: it holds what it holds, for as long as the bake takes, and then it needs to come back up to temperature before the next load. That makes it a queue with a fixed service time, and the arithmetic of queues is the arithmetic of a bake day.
One load ties the oven up for the bake plus the handling plus the recovery. In the default case that is 32 + 6 + 5, so 43 minutes for twenty-four loaves. Forty-eight pieces is two loads, ninety-six is four, and the fourth load comes out two hours and nine minutes after the first went in. Nothing about a better recipe changes that.
Recovery is the term that gets left out

Handling and recovery are a quarter of the cycle in that example, and both are invisible when you plan a bake by adding up bake times. Over four loads they add 39 minutes, which is more than another whole bake. The way to get a real figure for recovery is to leave an oven thermometer on the deck and watch how long it takes to come back after a load goes in — it depends on the thermal mass of the deck, the size of the burner, and how much cold dough went in at once.
Two decks are not twice as fast
Doubling the deck count doubles the pieces per load, which does halve the number of loads. But the same doubling puts twice as much cold dough into the box at once, so recovery gets longer, and loading two decks takes longer than loading one. The gain is real and large, it is just not two. This is also why the recovery field on the calculator is a number you measure with your actual load rather than a constant: it moves with how much you put in.
The spread is what breaks a bake day
The total session length is the number people calculate, and it is not the one that hurts. The one that hurts is the gap between the first load going in and the last, because every piece in the last load has been proofing that much longer than the pieces in the first. Four loads at a 43 minute cycle means the last dough waits two hours and nine minutes past the first. Either it goes into a retarder, or it gets shaped later, or the last load is over-proofed and everyone can see it in the crumb.
This is the practical argument for deck space over oven speed, and for staggering the mix rather than the bake. It is also why bakeries schedule backward from the time bread has to be on the shelf rather than forward from when they arrive.

How many loaves can I bake in a morning?
Divide the time you have by the cycle length and multiply by what fits in the oven. The cycle is the bake time plus loading and unloading plus recovery, so a 32 minute bake is really a 43 minute cycle in the default case here. Five hours of oven time after preheat is seven loads, and at twenty-four pieces a load that is 168 pieces. The limit is almost never the mixer or the bench; it is the number of times the oven can be filled and emptied.
What is oven recovery time and how do I measure it?
It is how long the oven takes to come back to its setpoint after cold dough goes in and the door has been open. Measure it by leaving an oven thermometer on the deck or the middle rack, loading as you normally would, and timing how long the reading takes to return. It varies with the thermal mass of the deck, the power of the burner or element, and how much dough went in at once, which is why a single published figure would be useless for most ovens.
Does adding a second deck double my output?
It roughly doubles what goes in per load, which halves the load count, but it does not halve the day. The usual answers are retarding the later loads, staggering the mixes so the dough for load four is shaped later, or accepting that the last bake will look different. Can I bake two different products in the same load?
Only if they want the same conditions and finish at the same time, and that is a narrower overlap than it seems. Different sizes finish at different times even at the same setting, so a mixed load means opening the door partway through to pull one product, which costs another recovery. If you do it deliberately, count that as an extra handling and recovery cycle in the loading field rather than pretending the load is free.
