A pan ends twice and only one ending is on the recipe card
A 60 portion pan of mac and cheese sounds like it lasts until 60 people have ordered it. On the default day it does not get close: 41 percent of 260 covers is 106.6 portions across five hours, so the pan is emptying at 21.3 portions an hour and would take 169 minutes to run out. The holding life on that line is two hours. The pan comes off at 120 minutes with 17.4 portions still in it, and the same thing happens to the second pan, so three pans get opened to serve 106.6 portions and 34.7 portions never reach a customer.
The pulled pork next to it, on a 45 portion pan and a four hour life, empties in 153 minutes and never sees its clock. Same truck, same day, two completely different failure modes, and the only difference is the relationship between the pan size and the rate the item sells at.
The rule the page keeps arriving at
Pan size wants to be the usage rate multiplied by the holding life. For the mac and cheese that is 21.3 an hour times two hours, so a 43 portion pan would clear inside its life and nothing would time out. Anything larger is holding product the service will not get through in time. Anything much smaller is an extra pan change during the rush, which costs a cook thirty seconds at the worst possible moment. That trade is the whole design decision, and it is different for every item on the line because the attach rates are different.
Space is a shared resource and nobody sizes for it
Six items wanting one or two spaces each is eight spaces, and the default truck has seven. The interesting part is which item should lose. Ranked by portions moved per space held across the day, the brisket comes last at 28.6, well behind the mac and cheese at 106.6 and the slaw at 143 — and brisket is taking two spaces to do it. It is also, on most trucks, the last thing anybody would volunteer to take off the hot line. That is the value of the ranking: it disagrees with the instinct.
Over-prep is structural, not sloppy
Product comes in whole pans, so the day needs 520 portions and produces 682 — 31 percent more. Some of that is the last pan of each item, which is unavoidable when a pan is indivisible. The rest is the timing out, which is not. Cutting the pan size on the two items whose clocks run out first is the only lever on this page that reduces both the waste and the prep hours at the same time.
What it does not do
It serves at a flat rate all window, and a real service is a rush with two flat stretches attached. A rush pulls product through faster, which empties pans before their clocks and reduces the timing out; the quiet hour on either side does the opposite. If the answer matters, run the rush as its own window with its own cover count. And nothing here is a food safety judgement of any kind. The holding lives come from you, out of the written plan your health department has accepted for your operation, and what happens to product at the end of the day is answered in that plan rather than on this page.

How much should a food truck prep for a given number of covers?
Portions needed is covers multiplied by the share of covers ordering each item, and the share adds to well over a hundred percent across a menu where an order has three things on it. At 260 covers the default menu asks for 520 portions. What you actually prep is higher, because product comes in whole pans and the last pan of everything is partly wasted — 682 portions in this case, 31 percent over.

How many pan changes will a service need?
The page counts them: pans opened across the day, minus one for each item that starts on the line. On the default day that is 13 pans opened and 7 brought up during service. Whether you can physically do that is a separate question, which is why there is a field for how many replacement pans you can get onto the line during the window — if that number is smaller, the par cannot be delivered as planned.
Does this tell me whether food is safe to serve?
No, and it deliberately supplies no holding times or temperatures of its own. Every holding life on the form is a figure you enter, taken from the written plan your health department has accepted for your operation and for that product. The page counts what times out against the life you gave it and nothing more. Any question about temperatures, holding, cooling or what happens to product at the end of service goes to that plan and to the department that approved it.
